Intolerance to the food you’ve just eaten can cause a buildup of gas in your intestines, which then causes flatulence.  Note that not everyone is intolerant to the same types of food, so the foods that cause flatulence can differ from person to person.  A person who has intolerance for a specific food will have a hard time digesting or breaking down that food in their intestines.  With the food left unprocessed, it will eventually ferment in the gut, and cause the gas to build up.  Once the gas buildup continues to a pressure that is too high to contain, it will find a way out, and there goes the fart.
