16. Prevention of Food Poisoning

Unfortunately, there are currently no vaccines or prophylactic medications (medicines designed to prevent a particular disease) available against food poisoning.  Good hygiene practices and cleanliness are still the simplest yet more effective ways one can prevent the spread of the bacteria.  Good hygiene practices include the time-tested and proven frequent and proper handwashing.  Additionally, food handlers and food servers using mouth shields will help prevent transmission of the bacteria directly onto the food.  Food handlers should also ensure that the food touches only surfaces that have been disinfected to kill or take away any bacteria that could be on those surfaces.

Cooking food to the correct temperatures will kill bacteria that are on the food.  Once the food is cooked, it must be stored in the correct temperatures (below 4∞C or above 60∞C) to prevent the breeding of bacteria.
