Lamb meat is made from young domestic sheep (Ovis aries). It’s a form of red meat – a phrase for meat from mammals that has more iron than chicken or fish. Lamb refers to the flesh of young sheep in their first year, whereas mutton refers to the meat of adult sheep. It’s usually eaten raw, but cured (smoked and salted) lamb is also popular in several regions of the world. Lamb can be a good component of a balanced diet due to its high protein content and abundance of vitamins and minerals. Lamb is high in iron, largely in the form of heme iron, which is more accessible and easily absorbed than non-heme iron found in plants.
