Nowadays, more and more chefs extol the wonders of the avocado. Actually, Mexicans have been enjoying the fruit in many ways since the time when Incas, Mayans, and Aztecs roamed the land. Guacamole is used as a siding or sauce to accompany many Mexican dishes. There are bottled versions, but they are a pale comparison to the ones that are freshly made. Most recipes are handed down as family traditions from generation to generation.
Many families and many chefs will have their own version of Guacamole, but it is generally a very simple mix of few, but flavorfully combined ingredients. Start with mashing perfectly ripened avocados in a “molcajete” (a mortar and pestle), just add your preferred ratio of salt, onions, cilantro, lime, and tomatoes, and there you have it, Guacamole. Put it on simple tortillas, or top it on tasty enchiladas, the ideas are varied and exciting.
