The people and cultures of Mexico were well established way before the Spaniards laid claim to the land.  As such, many of the food staples there nowadays can trace their origins back to the time when the Incas, the Mayans, and the Aztec tribes were snacking on simple fare of small fish wrapped in tortillas which were made out of locally grown maize, the local name for corn.  Enchilada is one such dish that traces its origins from that time, but has evolved to become more complex in current day.

As with many of Mexico’s popular dishes, enchilada starts with a base of thin flat bread called tortilla, which is made with corn.  On the tortilla will be heaped a variety of meat, cheese, seafood, beans, greens, and flavoring herbs.  Altogether, this makes for a gastronomically filling, and palate satisfying food that would go well with a slathering of chili sauce and sour cream.

Enchiladas are ordinarily enjoyed as a breakfast dish, as you may have noticed what a complete meal it is in itself.  A typical enchilada provides a well-balanced dose of carbohydrates, proteins, fat, and fiber.  More than just nutritional value, it also provides the flavor fiesta that gives you a great way to start your day.
