A well-loved local staple, Elote is what Mexicans call the ears of corn.  Either boiled or grilled, this food is readily available on most streets around the country.  Usually served on a stick for convenient eating, the corn can also be kernelled off the cob and served in a cup, in which case it would be called Esquite instead of Elote.

Mexicans often eat this traditional snack slathered with butter, and sprinkled with salt, chili powder, and cheese.  Some will add a dash of lime (the fruit this time), some will add mayonnaise, and some will add sour cream.  Which one you want to try is up to you, but you have got to give it a try to complete your acculturation to the local cuisine.

Elote, or Esquite, is meant to be a snack, not a meal.  But corn being corn, it does feel filling.  So, make it a point to leave some space for your next meal, there are yet a lot more flavors to explore on the streets and dining halls of Mexico.
