Pulque is a milky, mildly sour alcoholic drink that is now making a comeback in Mexico.  It is made from the sap of the agave plant, a succulent that is endemic to the arid regions of Central and South America.  The civilizations that occupied these regions, the Aztecs, Mayans, and Incas, were cultivating this plant and turning them into drinks long before the Spaniards discovered they were already there. 

Anthropologists who have been studying the pre-Hispanic cultures of the area have gathered enough evidence to believe Pulque was, in those days, reserved for persons of high stature.  Only priests and noblemen of those cultures had the privilege of enjoying what the Aztecs called the “drink of the gods”.  Commoners were not allowed to consume the drink.  It was just too special.

Pulque pre-dates Tequila.  And while Tequila has been a party favorite for a long time, Pulque has largely been unknown outside of Mexico.  In the 1900s, Pulque was not even popular in its own country of origin.  Of course, that is all changing now, as more and more Mexicans get reacquainted with this special drink from their long history and culture.
