Tejuino
Aside from Atole, Mexicans also make Tejuino, another drink made from corn. Unlike Atole, Tejuino is meant to be cold and refreshing. The corn is mashed, mixed with water and piloncillo (unrefined cane sugar), then boiled to let most of the water vaporize, thereby leaving a thick slurry. The slurry is cooled, then left alone to ferment a little.
The drink is served with a squeeze of lime juice, a pinch of salt, and topped with a scoop of ice or a lime-flavored sorbet. Originally from Jalisco, the drink is now popular all across Mexico, and is made even in the Mexican communities in the US.
