Birria may not be as iconic to Mexican food as tacos or burritos are, but it is just as well-loved.  Originally a beef dish, it is also sometimes cooked using goat meat or mutton.  A spicy, tasty stew, Birria is not considered a daily fare for the locals, but rather a dish for special occasions like weddings, birthdays, baptisms, or Christmas and Easter.

The preparation starts with marinating the meat in a mix of vinegar, chilies, herbs, and spices, then cooked in broth.  The key to a good Birria is in the slow-cooking.  The long simmering process renders the meat so tender, it can literally fall off the bone, and so tasty that the flavor permeates through each chunk of meat.  Of course, Birria being a Mexican dish, you can expect that there will be a lot of other flavorful herbs and spices mixed into the stew.
