In Italy, they have large circular crusts made of flour dough, lined with tomato sauce, then topped with a variety of assortments of meat and vegetables.  They call it the pizza.

In Oaxaca, Mexico, they have the Tlayuda.  But unlike the Italian pizza, Tlayuda crust is made of corn dough, like a tortilla, rolled thin and toasted or baked.  And instead of being lined with tomato sauce, the Oaxacans line their creation with a layer of refried beans.  Once the base layer is in place, the Tlayuda is then layered with Oaxacan cheese, meats of choice, and drizzled with salsa and cream.  And just as with pizza being available in different flavors, Tlayudas come in a variety of topping combinations.  So when you’re in Oaxaca, maybe it would be good to try not just one Tlayuda, but rather explore the wonderful variety of flavors available for this local delicacy.
