Mollete
If you are a fan of grilled cheese sandwiches, you are likely to enjoy the Mollete. This Mexican open-faced sandwich uses bolillo bread, which we mentioned earlier in this article. The bolillo is cut along its length, then filled with a hefty serving of frijoles (Mexican refried beans), and topped with heaps of cheese. With the frijoles and cheese in place, the sandwich is cooked in a broiler to melt the cheese into the frijoles and the bolillo. On its own, Mollete is good and filling. With a side of fried eggs, it would be enough for a meal, a really cheesy meal.
