Enchiladas al Horno

Earlier in the article, we already described what an Enchilada is.  This one, the Enchilada al Horno, is similar to that, but puts a tweak to the typical enchilada.

As described earlier, Enchiladas are rolled or folded tortillas stuffed with typical Mexican fillings like chicken, beef barbacoa, vegetables, and more.  Once stuffed, the tortillas are slathered with a healthy portion of verde (green) or rojo (red) sauce made of chilies.  And here is the tweak:  the Enchilada is then baked (al horno).  The baking process allows all those flavors to blend and seep into the rolls.  It is then served topped with cream, cheese, onions, and sometimes with salsa.
