Chilaquiles
Imagine starting your day with an energy boost of protein and flavors! That’s what a Chilaquile is!
Chilaquile is a popular food in Mexico, well-known and well-loved amongst locals. Often served as a breakfast or brunch (start your day right!), this day starter is made of lightly-fried corn tortillas cut into bite-sized pieces, and combined with either salsa verde (green salsa) or the spicier salsa rojo (red salsa), depending on how hot you want your food. It is served with pulled chicken, and fried eggs, either scrambled or estrellado (what the locals call a sunny-side up), and often topped with either cream or cheese. This dish would sometimes be accompanied with some frijoles, which is another Mexican staple made of refried beans. Guacamole is another good addition when eating a Chilaquile.
