Imagine a tortilla that is fried until thin and crispy.  Sounds good, huh!  Tastes good, too!

Tostadas, Spanish for “toasted”, are a popular style of cooking tortillas, either last night’s leftovers, or fresh ones.  The frying literally transforms the tortilla in terms of flavor and texture.  The transformed tortillas can be eaten on its own, or crushed and mixed into salads, or as a base for other dishes.  Tostadas are often served with a side of salsa, or mole, or guacamole, sometimes mixed with refried beans or frijoles, cooked meat, seafood, and of course, cheese.

A tostada will go well with Ceviche, a dish made of fresh raw fish cured in citrus juices, like lemon or lime, and mixed with slices of onions and chilies, with salt and pepper according to taste.  Imagine how a crispy tostada goes well with a chewy fresh raw fish, and you can imagine why this dish has got to be on your “to try” lists when in Mexico.  The usual fish of choice for this dish, much like in a Japanese sashimi, is the Tuna.  Hence, Tuna Tostada.
