Tlacoyo

Kiwilimon’s

Very few people outside of Mexico have heard of Tlacoyo.  It may not ring a bell to most non-Mexicans, but it sure will hit the spot when you taste it in Mexico.

Tlacoyos have been around since even before the Spaniards discovered there were lands beyond their horizon.  Made with thicker masa (corn dough) tortillas which are deep-fried, it resembles a small thick-crust pizza shaped in an ellipse.  Once fried to a golden brown, the tortillas are topped with the usual Mexican staple fare like ground beans, beef, or pork, or chicken, and cheese.  Added to the usual toppings would be shredded lettuce, queso fresco, cotija cheese, and salsa verde.

Tlacoyos are usually served sprinkled (slathered for some) with sour cream, typical of Mexican dishes.  Some may also prefer to add some chilies for that extra spice.
