Flautas
Most Americans would probably be familiar with a Flauta. Aside from Tacos, Flautas probably rank amongst the most popular and familiar dishes in the many Mexican restaurants across the United States. Of course, most of these restaurants probably tweaked their recipe to appeal more to the common palate of Americans, so it’s safe to say the originals in Mexico would still be worth the adventure.
Flautas are tortillas (of course, this is Mexico!) heaped with slices of juicy beef, or chunks of savory chicken, and usually with lots of tangy cheese. Once filled, the tortillas are rolled as if fat “cigars of meat”, and then deep fried to a golden crisp. This is often served with some shredded lettuce and crumbled queso fresco (fresh cheese). Many Mexicans, and most tourists, would often eat this with a nice ice-cold cerveza (beer!).
