Pambazo, the delicacy, is named after Pambazo, the bread which is used to make this sandwich.  Yes, it is a sandwich, made of a crusty white Mexican bread, and often found being sold in food stalls all over Mexico.  Depending on how hungry you are, this sandwich could be a light meal or a heavy snack, because the typical Pambazo is big, as in bigger than your typical hamburger bun.

A typical Pambazo would be a bread stuffed with a flavorful hash of potatoes and chorizos (a kind of sausage), or sometimes a choice of shredded pork or shredded beef.  The entire sandwich is then dipped in a warm bath of chili pepper sauce.  The chili in the sauce is usually guajillo chilies, which gives the Pambazo its signature reddish color.  The red sandwich is then fried until it is crispy. 

Pambazos would already be flavorful in themselves, but they are often eaten with an addition of more flavors provided by sprinklings of cheese, salsa, sour cream, or guacamole (this was described earlier in the article). Some Mexicans add lettuce to their Pambazo.

If the typical Pambazo is too big for your appetite, they also have their mini-me versions.  Called Pambacitos, or “little Pambazo”, these sandwiches are lighter in weight and volume, but often just as rich in flavor.
