Amaranth is a cosmopolitan genus of several species of plants. As a dietary source of plant protein, the one you need to be eating is Amaranth Grain. Sometimes, this grain is ground into a flour and used as a baking ingredient.

As a grain, Amaranth rates at 14g protein for every 100g of grain. That is comparable to some seeds, and higher than most beans and nuts. There is a possibility of confusion here because Amaranth dye, which is also called Amaranth, has been banned in some States in the USA, having been found to contain carcinogens. The grain and flour, however, are all approved for dietary consumption of humans. Some animals, especially ruminants (e.g. cows, sheep), can have adverse reactions to Amaranths and their derivatives. So, if you consume food with Amaranth in them, make sure to check before you feed leftovers to your pets or farm animals.
