Goose is a popular type of poultry all around the world. Although classified as ‘white meat,’ geese have the color of red meat and resemble beef. The meat of a huge bird in the Anatidae family is referred to as goose. While goose meat is not popular in the United States or the United Kingdom, it is popular in much of the rest of the world. In fact, goose meat is a traditional Christmas dish in many European countries, including Germany. Goose is also quite popular in the Eastern part of the world, especially in China and Hong Kong. In an interview with PAP, Dr. Agnieszka Orkusz of the Department of Technology of Food of Animal Origin at Wroclaw University of Economics emphasized that research undertaken by the university since 2010 reveals that fatty acids constitute more than 70% of the total composition in goose flesh. Goose is considered too high in calories, but most of the calories are concentrated in the skin. Raw meat has just 161 kcal per 100 g. This value rises dramatically after thermal treatment. So, 100 g of boiled product already comprises 447 kcal, but a roasted goose contains 620 kcal.
